Craving for a BLT comes on fast during high tomato season. The tomato, lettuce, bread and mayo are close at hand, but often, the bacon is in the freezer. In a solid slab.
Next time you open a package of bacon, use what you want, then take each remaining slice, roll it into a pinwheel and poke with a toothpick to secure the roll. Toss the rolls on to a tray and freeze. Transfer the individual frozen bacon rolls to a resealable plastic bag, and remove them as needed. Two or three are enough for one sandwich. The pinwheels thaw in minutes. Or, toss pinwheels into the pan, remove the toothpick. The slices will unwind into flat slices as they get warm.
